Yeast is sold in three forms that behave differently, weigh differently and are measured differently, yet most recipes are written for exactly one of them. If the recipe on your counter calls for instant yeast and your fridge holds active dry, the difference between a beautiful loaf and a doorstop is a conversion you can do in your head — once you know the three numbers below.
The three yeasts and why they differ
- Fresh (compressed) yeast: moist blocks of live yeast, about 70% water. It is sold refrigerated, has a short life, and is used mostly by bakeries.
- Active dry yeast: dehydrated granules with a protective coating. It was designed to be dissolved in warm water before use, though modern recipes often mix it straight into flour.
- Instant (rapid-rise / bread machine) yeast: finer granules, no protective coating, absorbs moisture immediately. It can go straight into the dry ingredients with no dissolving step.
Gram for gram, instant yeast is the most concentrated of the dry forms, and fresh yeast is the least concentrated because of its water content. That is where every conversion ratio comes from.
The conversion rule that covers everything
For the same rising power in a recipe:
- 1 part instant yeast = 1.25 parts active dry yeast.
- 1 part instant yeast = 3 parts fresh yeast.
- 1 part active dry yeast = 2.4 parts fresh yeast.
In everyday terms: if a recipe asks for 7 g (about 2 and a quarter teaspoons) of instant yeast, use 9 g of active dry or 21 g of fresh yeast. The ratio between the two dry forms is the one you will actually use, and it is baked into the size of the packets you buy.
What a teaspoon actually weighs
Scales measure yeast more reliably than spoons, but spoon measures are what most recipes print. The standard weights are:
- 1 teaspoon of instant yeast: about 3 g.
- 1 teaspoon of active dry yeast: about 2.8 g.
- 1 tablespoon of instant yeast: about 9 g.
- 1 standard American packet of active dry yeast: 7 g (about 2 and a quarter teaspoons).
- 1 standard American packet of instant yeast: 7 g.
- Fresh yeast, 1 small cake (0.6 oz): 17 g — the usual replacement for one 7 g packet of dry yeast.
Notice the pattern: one 7 g packet of either dry yeast replaces about 17 g of fresh yeast. If your recipe says "one cake of fresh yeast", reach for one packet of dry and your dough will not know the difference.
Do you need to dissolve active dry yeast first?
Old-style instructions say to "proof" active dry yeast in warm water with a pinch of sugar until it foams. That step exists because the old granules really did need it. Modern active dry yeast is milled finer and can usually be mixed straight into flour like instant yeast. The safe middle path: if your recipe was written for active dry and says nothing about proofing, mix it in dry. If the recipe specifically asks you to dissolve it, follow the recipe.
One caveat: instant yeast does not need dissolving at all, and proofing it in warm water is unnecessary. Adding it directly to the flour keeps the water temperature predictable, which matters more to a consistent rise than the proofing ritual.
Water temperature is the hidden conversion
Whatever form you use, the liquid temperature is part of the equation. Too hot and you kill the yeast; too cold and the rise stalls. For a normal room-temperature proof, aim for liquid at about 38–43 C (100–110 F) for active dry dissolved in water, and slightly cooler — 32–38 C (90–100 F) — for fresh yeast. Adjusting the rise when you swap forms
Instant yeast works faster than active dry, so a recipe converted to instant usually rises a little quicker — expect 10 to 20 minutes less on the first rise. Fresh yeast is often described as gentler and slower. If the room is cold, use the recipe time as a floor, not a ceiling, and judge the dough by its volume rather than the clock. Storing yeast so the numbers stay honest
Yeast dies slowly, and dead yeast weighs the same as live yeast — which is why measuring by weight cannot save a stale packet. Keep dry yeast sealed in the fridge or freezer; it keeps for months. Fresh yeast keeps about two weeks refrigerated and does not freeze well. The classic freshness test (a spoonful in warm water with sugar, wait 10 minutes, look for foam) is worth doing if the packet has been open for a while.
