Metric vs Imperial for Bakers: Grams, Cups, Ounces Explained

Open a recipe from the United States and you will see cups, tablespoons, sticks and degrees Fahrenheit. Open one from Germany, Australia or Japan and you will see grams, millilitres and degrees Celsius. The systems are not two ways of saying the same thing — they encode two different philosophies of cooking. One measures the ingredient; the other measures the container. For bakers, that difference is everything.

The core difference: weight vs volume

Metric recipes weigh dry ingredients: 250 g flour. Imperial-tradition recipes (and the US recipes that descend from them) measure volume: 2 cups flour. Weight is absolute — a gram of flour is identical everywhere. Volume is relative — a cup of flour changes with humidity, compaction and measuring technique, by as much as 30%.

That is why the professional baking world, even in the US, quietly uses grams. King Arthur Baking publishes cup weights; pastry textbooks are written in grams; competition bakers weigh everything. Metric is not "better" because it is European — it is better because it is a weight system, and baking is the one branch of cooking where precision compounds.

The US system is not really imperial

A useful correction: the US customary system differs from the British imperial system, even where the names match. A US cup is 236.6 ml, a British cup 250 ml. A US fluid ounce is 29.57 ml, a British (imperial) fluid ounce 28.41 ml. A US gallon is 3.79 litres, an imperial gallon 4.55 litres. When a British recipe says "1 pint", it means 568 ml, not the 473 ml of a US pint.

In practice, British recipes these days give weights in grams anyway — the UK adopted metric decades ago and home bakers weigh. The genuinely cup-heavy corner of the world is North America, plus the large number of online recipes written in its style.

Converting ounces: weight and volume are different things

Here is the trap that catches every new converter: an ounce can mean weight (28.35 g) or volume (29.57 ml, then called a fluid ounce). "8 oz of flour" is a weight — about 227 g, which is roughly 1¾ cups. "8 fl oz of milk" is a volume — 237 ml, exactly 1 cup. Mixing the two is how a cake becomes a brick.

Pounds and the baker's division

The pound (453.6 g) is convenient for buying — a 1 lb loaf pan, a ½ lb of butter — but awkward for recipes, which is why bakers rarely scale in pounds. When a US recipe says "1 lb flour", it means 16 oz, or about 453 g, roughly 3⅝ cups of all-purpose flour. Remember the pairing: 1 lb = 16 oz, and 1 oz = 28.35 g, and you can navigate any weight recipe.

Why metric recipes feel cleaner

Metric arithmetic is decimal: halve 375 g and get 187.5 g; double 225 g and get 450 g. Imperial arithmetic drags fractions through everything: halve 1¾ cups (280 g worth of flour) and face ⅞ of a cup — a mark that does not even exist on most measuring sets. This is the practical argument for grams, and it is why our recipe scaler outputs grams as decimals but cups as friendly fractions: each system gets the format that suits it.

Oven temperatures across systems

Fahrenheit gives fine-grained control (every degree matters less at baking temperatures) while Celsius is coarser but simpler — 180 °C vs 350 °F is the classic middle-ground setting, and the conversion is °F = °C × 9/5 + 32. The hybrid recipes that most bakers actually use

The real world is mixed: a US recipe with metric conversions in parentheses, a European blog that lists cups "for convenience", a cookbook that weighs flour but measures milk. The winning strategy is to convert once, into one system, and stick to it for the whole recipe — never mix a cup of flour with 120 g of sugar measured by a different rule. Convert everything to grams for dry ingredients, keep liquids in ml, and the recipe becomes yours.
