Every measuring set has two families of cups: the sturdy ones with pouring spouts and graduated markings, and the nested ones with smooth rims that click together into a ring. They are not interchangeable — not because they hold different volumes (a dry cup and a liquid cup both hold the same 236.6 ml), but because each is built for a different measuring motion, and using the wrong one invites error.
Dry cups: fill, level, done
Dry measuring cups are designed to be filled to the brim and levelled. The smooth rim exists so a knife can sweep across it. This works beautifully for flour, sugar, cocoa and oats — anything you can heap and scrape flat.
When people use a liquid measuring jug for dry ingredients, two things go wrong. First, dry ingredients bridge and settle irregularly inside a tall jug, making the surface read differently from different angles. Second, you cannot level a cup of flour inside a jug without compacting it. The result drifts by 10–20%, which is exactly the error band that separates a good cake from a dry one.
Liquid cups: read at eye level
Liquid measuring cups leave headroom above the line, so you can fill without spilling and read the meniscus at eye level. The pour spout exists for obvious reasons. And because liquids level themselves, the jug's job is simply to show you where the surface sits.
The classic error with liquids: filling to the line while the cup sits on the counter and looking down at an angle. You will consistently over-pour, usually by 5–10 ml per cup. Set the jug on the counter, bend down so your eye is level with the marking, and read the bottom of the meniscus curve. It takes two seconds and fixes the single most common measuring error for milk and water.
When the difference stops mattering
For coarse, forgiving ingredients — chocolate chips, chopped nuts, rolled oats — using the "wrong" cup changes almost nothing. For liquids thicker than water, like honey or molasses, a liquid cup is still easier because they cling to glass and read cleanly; grease the cup with a drop of oil first and the syrup slides out. For eggs, milk and water in normal quantities, the error from a dry cup is small enough to ignore in most bakes.

One more layer: US vs metric cups
To keep things interesting, the cup itself has variants. The US customary cup is 236.6 ml, the US legal cup (used for nutrition labels) is 240 ml, and the UK/Australian/NZ cup is 250 ml. A 240 ml "cup" measuring set bought online is a blend. For most baking this matters less than measuring method — but for water-heavy recipes scaled in bulk, the 5% difference adds up. Our converter uses 236.6 ml for volume conversions and 240 ml for the grams-to-cups nutritional convention, with the assumption stated on each tool.
The practical kitchen setup
Here is the minimum set that covers everything: one 2-cup (500 ml) liquid jug with clear markings; a nested set of dry cups from ¼ cup to 1 cup; measuring spoons from ⅛ tsp to 1 tbsp; and a digital scale. With those four items you can measure anything, in any unit, to within a gram. The scale removes the argument entirely — weigh liquids too, since 1 ml of water is 1 g, and your jug becomes a backup rather than a dependence.
Should you switch to weighing everything?
For liquids, weighing is optional — water and milk are dense and reliable. For dry ingredients, weighing is transformative, for all the reasons covered in our flour measuring guide. The cups will not be thrown away; they will simply retire from heavy duty. In the meantime, use the right cup for the right job, read liquids at eye level, and your measurements will finally be repeatable from one week to the next.
Equivalents worth memorising
Once the right cups are in your hands, a few volume equivalents will cover most recipes without a converter: 3 teaspoons in a tablespoon, 16 tablespoons in a cup, 2 cups in a pint, 2 pints in a quart and 4 quarts in a gallon. Metric cooks can use the same ladder with millilitres: a US legal cup is 240 ml, a tablespoon about 15 ml and a teaspoon about 5 ml. Keep the two sets of cups separate in the drawer, and wash liquid cups by hand if they have printed markings — dishwashers slowly wear the graduations off. When a measuring cup is worn or faded, replace it; a cup with half-erased lines is a recipe error waiting to happen, and the cost of a new one is less than the cost of one ruined batch.
